Colombaia is a 4 hectares vineyard, house and cave. The soil is dry farmed clay/calcar full of fossils shells. Dante and Helena work the vineyard as a big biodynamic garden and hand pick at harvest. The winemaking in the cave is as minimal intervention as possible. This wine comes from the old vineyard. Each vintage has a different color label as a reflection of each season’s uniquness. It is made with native yeast spontanous fermentation without temperature control, has no added sulfites, is vegan, organic certified and Demeter certified biodynamic, unstabilized and unfiltered. The wine has a nose of spice, light brett with stewed cherries and nice acidity on the palate.
