40% Grenache, 40% Syrah and 20% Carignan. Julien Zernott and Delphine Rousseau have farmed spectacularly steep, chalky stone terraces high above the Orb river. Their philosophy is simply to focus on farming their vineyards as naturally as possible using organic and biodynamic methods, and do as little as possible in the cellar short of intense sorting of the fruit. During its three week fermentation, only a gentle push-down of the cap occurs to keep it healthy. Aged five months in large upright wooden tanks and cement vats, lightly filtered, no more than 30mg/l (30 parts per million) of total SO2 is added. This is meant to be unfussy wine for warm weather - fresh red and crunchy fruits and fresh, bright acidity.
