ILLAHE is a Chinook word meaning “earth” or “place” or “soil”, similar to the French “terroir”. It is the winery’s goal is to make wine as naturally as possible from soil to bottle. Some of their wines are made entirely by hand, with no electricity or modern mechanization - employing Percheron draft horses to mow and deliver grapes to the winery at harvest, and scooping the berries by hand to press in wooden baskets. The winery is a family owned and operated estate. It’s part of the Deep Roots Coalition, which is committed to dry agriculture and responsible water practices and LIVE certified. Fermentation is with 100% native yeast. The wine has aromas of blueberry, cranberry, graphite, violet, and cedar and finishes with more fruit, a little baking spice, and silky tannins.
