Capitoline, Dry Vermouth
Our friend Kat makes Capitoline by hand in small batches at New Columbia Distillers Ivy City, DC. The base wine is carefully selected as a critical part of the final vermouths’ foundations (unlike most mass-produced vermouths), aromatized with a series of botanicals and fortify with red winter wheat spirit. Tasting notes include lemon, saffron, honey, and quinine. We use it to lighten up our Brookland cocktail.
