This is the Breton's bistro-style, glouglou wine from young vines. It's firm and fresh when served chilled and structured and nervy at room temp. The wine is gently de-stemmed and cold-macerated in stainless steel to keep it juicy, light, fresh, and herbaceous. Very little sulfur is used in the winemaking process, and none is added at the bottling stage. The Bretons are pioneers of the natural wine movement, organically certified, and are in the process of receiving biodynamic certification despite the challenges of such farming so far north in the Loire.
