The wine is fermented with native yeast, not pumped or racked, fermented on lees for 14 months, and unfined. It is made from vines averaging about 35 years in age and meant to be drunk fresh and young. It is named for and aimed to show “classic” Muscadet qualities of ample citrus and salinity on the palate that is true to its variety and terroir. Guy Bossard wanted to be a winemaker like his father and grandfather since childhood. He was ahead of his time, getting the Domaine organically certified in 1975 and the land Biodynamic certified (Demeter) since 1988. The wine production has been Demeter certified since 1996. Guy made his own fertilizer in the ‘70s from algae, forest brush and basalt when others started buying chemical fertilizers. The land is tended and the grapes harvested by hand. No artificial technology in employed their cellars, and each of their vats is linked to a particular soil and a particular vintage. They are members of the "Renaissance des Appellations", a group committed to respecting the soil.
