Sémillon, Loin de l'oeil, & Mauzac
All Hauts-Baigneux wines are superb buys in the natural, minimal-intervention wine category. This sparkling wine is a methode ancestrale (or pet-nat) from clay-silty and clay-limestone soils in the Azay-le-Rideau of Southwest Loire. The wine is fermented on natural yeasts in concrete tanks and aged 6 months in bottle. The winemakers focus on the character of the land and ecologically preserving it.
