Foradori, Fontanasanta, Nosiola 2018
Elisabetta Foradori is a pioneer in biodynamic farming, natural winemaking, and the propagation of local varieties in Northern Italy. Nosiola is the only white grape variety native to Trentino. It was once widespread but has been replanted with pinot grigio. The Fontanasanta vineyard with its clay soils is located on the hills above Trento and perfect for this grape.
This unique wine is macerated for a long time on skin in clay tinaja to extract aromas and texture, yet it picks up very little color. The wine is soft and low in acid and has honeydew and honeysuckle notes with a touch of salinity.
