This elegant, bone dry sparkling wine has fine bubbles lending a creamy texture, notes of fresh green apple, lean acidity, and a long finish.
Melanie, the winemaker, learned about wine and the dry house style from her grandfather and father but has worked and studied at many great wineries as well. She began the process of gaining organic certification for the winery in 2018 although her father stopped using herbicides and adopted a no-till regimen in the 1980s. Today, each parcel has different grasses, legumes, and grains sown around the grapes depending on what is best suited for the soil and grape.
The acronym Breit comes from Hangenbriete, the name of the vineyard. The wine spent 31 months on lees (most French crémant spends about 9 months). There are only about 800 cases each year.
