Bodegas Maurodos San Roman Toro 2016
100% Tinta de Toro (a heat resistant mutant of Tempranillo)
The grapes come from organically certified vineyards that were mostly planted in the late 70s. The Toro region is sandy and rocky and gets very cool at night and very warm during the day. Each plot is picked and destemmed by hand when ready, then fermented at a low temperature in different types of containers. After gentle maceration, the wine is aged for two years in 20% new French and American oak barrels and another 6 months in bottle before release. The 2016 was a good vintage with a warm summer after rainy winter. Be sure to decant and let this big wine open up.
